CSIRO releases new guide to food safety
CSIRO has released a new book, Make It Safe: A Guide to Food Safety, a comprehensive reference book for commercial and retail food preparation and handling.
The book, created by CSIRO’s Food and Nutritional Sciences section, is aimed at small-scale businesses who are already in, or are considering entering, food manufacture or retail. It focuses on the prevention of the spread of food-borne pathogens, as well as chemical contamination and adulteration with physical debris.
The book also details the legal rights and responsibilities of the food manufacturer or retailer, and covers all areas of food safety, from employee health, pest control, labelling, cleaning and food handling and preparation, to choosing suppliers, traceability and food recall plans. Key points of each chapter are included in chapter summaries for easy reference.
This plain-English guide is ideal as a step-by-step how-to for a new business, or a reference for established businesses.
