Young chef duo claim national title

For the second year in a row, two of Perth Convention and Exhibition Centre’s budding young chef’s out-cooked seven other states to win top spot in the 2010 Nestle Golden Chefs Hat Awards in Melbourne last week.

Cameron Wetton (21) and Shane Middleton (20) created a three course meal for the judging panel from which they achieved one silver and two gold medals for culinary excellence.

The two gold medal winning courses included an entree of citrus butter baked barramundi with beetroot puree and barramundi crackle, yabby and barramundi tortellini with sauce American, and a yabby and barramundi mousseline wrapped in leek and pickled beetroot. Dessert consisted of a dark chocolate ganache tart with a mandarin parfait and crushed caramel vanilla marshmallow, mandarin compote and kiwi fruit coulis.

Middleton and Wetton were ecstatic about winning for a second time. “It was a bit emotional, no one has ever won this competition two years in a row so we were quite speechless,” Shane Middleton said.

The pair has won a $15,000 prize to develop their culinary career. They will head to Chicago, USA in May 2011 where they will gain valuable work experience at Charlie Trotter’s, attend the National Restaurant Association Show and finish up with a tour and training at Sysco, a North American foodservice marketer and distributor.

Winning the national competition last year, the Western Australian Duo won a trip to Santiago, Chile to attend the 34th World Association of Chef Societies (WACS) Congress.

The Nestle Golden Chef’s Hat Award is the longest running chef’s competition in Australian dedicated to the development of junior and apprentice chefs.
